Tropical Fruit Pavlova recipe

Pavlova is really easy to make and it looks very impressive. Garnish this Pavlova with tropical fruit for a delicious party pudding.


  • 5 egg whites
  • 275g caster sugar
  • 1 tsp. vanilla extract
  • 1 tsp. corn-flour
  • 1 tsp. white vinegar
  • 4 passion fruit
  • 1 mango
  • 1 banana
  • 1 pineapple
  • 200ml whipping cream

Method of Preparation:

  1. Preheat the oven to 160C and draw a 30cm-ish wide circle on a piece of greaseproof paper.

  2. Chop the fruit up peel the mango and cut it into squares. Slice the banana. Remove the skin and core from the pineapple and cut the pineapple rings into pieces. Scoop the fruit from the flesh of the pineapples.

  3. Place the egg whites into a blender. Blend them until white and fluffy and stiff. Gradually pour in the sugar and continue blending until stiff and glossy. Rub a bit of the mixture between your fingers if it feels grainy, continue blending.

  4. Add the vanilla extract, white vinegar and corn-flour. Blend to combine.

  5. Use a bit of the meringue to stick the greaseproof paper to a baking tray.

  6. Scoop the mixture out onto the circle and flatten the top of the Pavlova with a spatula.

  7. Whip the cream.

  8. Put it into the oven for around 1 ½ hours. Once cooled, garnish it with the cream and then the fruit.
