Strawberry and Cream Cake recipe

This cake is light and delicious. Itís really easy, too. The strawberry sponge is delicious as it is, but even better with the cream cheese icing or with the buttercream icing.


  • 4 eggs
  • 16 large fresh strawberries
  • 400g caster sugar
  • 150ml vegetable oil
  • 400g plain flour
  • 1 tsp. vanilla extract
  • 4 tsp. baking powder
  • Pinch of salt
  • 1 tsp. lemon zest

Method of Preparation:

  1. Preheat the oven to 170C and grease and line two standard cake tins.

  2. Blitz the strawberries in a blender and then pass them through a sieve to make a puree.

  3. In a large bowl, whisk the eggs and beat in the caster sugar, vegetable oil, vanilla, lemon zest, salt and strawberry puree until well combined.

  4. Sift in the flour and the baking powder and mix well. Once combined, pour into the two tins and then bake for 25 minutes.

  5. Allow to cool and then ice the cakes.
