Soft Chewy Cookies recipe

These cookies are delectable and gooey in the centre, rather than crispy. Wrap them in cellophane and tie a ribbon around them for a lovely party favour.


  • 250g plain flour
  • 200g brown sugar
  • 100g caster sugar
  • 175g butter
  • 1 tbsp. vanilla extract
  • 250g chocolate chips
  • Pinch of salt
  • 1 tsp. bicarbonate of soda (if you don't have this, use self-raising flour
  • 1 whole egg + 1 egg yolk

Method of Preparation:

  1. Preheat the oven to 170C and grease a couple of baking trays.

  2. Melt the butter in a little saucepan and then set it to one side.

  3. Sift together the flour, salt and bicarb and set them to one side.

  4. Mix together the melted butter, brown sugar and caster sugar. Beat the egg and egg yolk, along with the vanilla, until the mixture is smooth and everything is combined.

  5. Mix in the dry ingredients and then fold in the chocolate chips.

  6. Using a tablespoon, drop cookies onto the greased baking trays, leaving enough space in between them to spread out.

  7. Bake for 15 minutes or until golden brown.
