Satay Chicken recipe

Satay chicken is traditional finger food, and the flavours of peanuts and chillies really make this a dish to remember. Again, remember to place out lemon water bowls for people to rinse their fingers. This recipe is really easy, too.

  • 8 skinless chicken breasts
  • 1 tub of smooth peanut butter
  • 200ml soy sauce
  • 2 red chillies
  • Packet of wooden satay sticks

Method of Preparation:

  1. Soak the wooden sticks for at least two hours before using them to cook with.

  2. Chop the chicken breasts into small pieces.

  3. Finely chop the chillies by cutting them down the middle and removing the seeds and pith. Finely slice them.

  4. Mix the peanut butter with the soy sauce, slowly, until smooth. Add the chillies and fold them in.

  5. Put half of the peanut sauce into a dish and set it to one side. You can use this as a dipping sauce.

  6. Put the chicken cubes into the remaining sauce and leave them to marinade overnight in the fridge.

  7. Thread the chicken onto the soaked wooden sticks and then either grill the chicken or BBQ it for five minutes on each side.

  8. Serve the chicken sticks with the dipping sauce.
