Rocky Road recipe

This rocky road incorporates crystallised ginger for a more grown-up flavour, but for kids, remove the ginger and add a handful of mini marshmallows instead. Once cooled, wrap the rocky road in cling wrap for a lovely gift.

Ingredients:

  • 200g milk chocolate
  • 200g dark chocolate
  • 100g butter
  • 2 tbsp. golden syrup
  • 100g ginger snap biscuits
  • 50g mixed nuts, chopped
  • 8 pieces of crystallised ginger

Method of Preparation:

  1. Roughly chop the ginger biscuits and the crystallised ginger.

  2. Break up the chocolate pieces and put them into a glass bowl with the butter and golden syrup. Place the bowl over a saucepan of simmering water and melt the chocolate and butter together. Donít let the bowl touch the water and use the highest quality chocolate you can afford to prevent burning or crumbling.

  3. Once melted, mix in the biscuits, nuts, and ginger.

  4. Pour the mixture into a greased, lined loaf dish.

  5. Allow the mixture to cool and set before slicing it into chunks.
