Red Velvet Cake recipe

This traditional American cake is very popular for a reason its incredibly tender and melt-in-the-mouth. Try it with one of our icing recipes.


  • 600g caster sugar
  • 375g plain flour
  • 250ml buttermilk
  • 250g butter
  • 6 eggs
  • 3 tbsp. cocoa powder
  • 2 tbsp. red food colouring
  • 1 tbsp. malt vinegar
  • 1 tsp. vanilla extract
  • 1 tsp. bicarbonate of soda
  • Pinch of salt

Method of Preparation:

  1. Grease and line three standard cake tins (or use two and then wait for them to cool before making the third cake).

  2. Preheat the oven to 170C.

  3. Beat together the butter with the sugar until softened and pale. Beat in the eggs, one at a time, using a bit of the flour after each addition if it looks like it will curdle.

  4. Mix the food colouring with the cocoa powder and stir it into the mixture.

  5. Tip in the flour, spoon by spoon, alternating with the buttermilk. Mix well after each addition so that you have a smooth mixture.

  6. Mix the bicarb with the mixture and then stir it into the mixture. Add the vanilla and the salt. Mix gently.

  7. Divide the mixture between the tins and then put it into the oven for 25-30 minutes. Ice it once cooled.
