Rainbow Cake recipe

This cake takes a fair bit of time to make, but the end result is really impressive. This recipe makes six cakes.


  • 12 eggs
  • The weight of 12 eggs in caster sugar
  • The weight of 9 eggs in plain flour
  • 3 tsp. vanilla extract
  • 2 tsp. lemon zest
  • 1 tbsp. red food colouring
  • 1 tbsp. orange food colouring
  • 1 tbsp. yellow food colouring
  • 1 tbsp. green food colouring
  • 1 tbsp. blue food colouring
  • 1 tbsp. purple food colouring

Method of Preparation:

  1. Grease and line six cake tins, or line two and then make the other cakes once youíve made the first two. Preheat the oven to 190C.

  2. Separate the eggs and place the egg yolks into a saucepan with the sugar and heat until they're warmed through. Once warm, put them into a bowl and add the lemon zest and vanilla extract.

  3. Whisk the egg whites to stiff peaks with an electric mixer, and then fold in the egg yolk mixture.

  4. Sieve in the flour and stir well, but donít over-mix it. Divide the mixture into six and then beat in a different food colouring into each mixture. Spoon one coloured mixture into each tin, keeping them all separate, and then cook the cakes for an hour or until a skewer inserted into the centre comes out clean.

  5. Once cooled, the cakes can be iced and stacked in the following order: purple on the bottom, then blue, then green, then yellow, then orange, with the red cake on the top. One slice of cake will reveal all of the colours.
