Quiche Tartlets recipe

Mini quiches are great party food because they're so portable. These quiches are topped with mozzarella, but you can use any cheese that you like.

Ingredients:

  • 12 eggs
  • 120ml single cream
  • 2 red onions
  • 5 large mushrooms
  • 3 rashers of smoky bacon
  • 2 mozzarella balls
  • Salt and pepper

Method of Preparation:

  1. Whisk the eggs until they're completely smooth. Whisk in the cream and season the egg mixture well. Set it to one side.

  2. Finely chop the onion into dice. Slice the mushrooms into thin round and chop the bacon into lardons.

  3. Grease a 12-hole muffin tin and preheat the oven to 200C.

  4. Put the bacon into a warm pan and cook it until the fat has rendered from the bacon and the bacon is cooked to your liking. Take the bacon from the pan and place it onto some kitchen towel to drain.

  5. Place the onions into the bacon fat and cook them until translucent and golden. Add the mushrooms and cook for a further 5 minutes. Season well.

  6. Divide the bacon, onion, and mushrooms between the holes on the muffin tin and then pour the egg mixture over the ingredients.

  7. Slice the mozzarella balls and place one slice on top of each muffin hole.

  8. Place the muffin tin into the oven and cook them for 8-10 minutes or until fully cooked all the way through.
