Paella recipe

Perfect for seafood lovers, this dish is a real crowd pleaser. Itís incredibly easy too. Serve it with a bit of garlic bread and lemon wedges.

Ingredients:

  • 400g mixed seafood of your choice
  • 300g risotto rice
  • 1 litre of fish stock
  • 200g frozen peas
  • 150g chorizo sausage
  • 1 onion
  • 1 tsp. turmeric
  • Olive oil

Method of Preparation:

  1. Put the stock into a large saucepan and heat it to just below simmering point.

  2. Finely chop the onion and roughly chop the chorizo. If the seafood is in big chunks, cut it into smallish chunks.

  3. Heat a little oil in a frying pan and then cook the onion for five minutes without browning it.

  4. Add the chorizo and cook for a further five minutes, then add the turmeric and the rice. Stir the rice into the other ingredients to coat the rice in all of the oils.

  5. Stir in the stock and bring the mixture to a simmer. Simmer it for ten minutes, then add the seafood and simmer for another 5 minutes. Add the peas and then continue simmering until everything is cooked, around another 5-10 minutes.

  6. Serve hot.
