Mini Pizzas - Pesto Chicken Topping recipe

This pizza topping is extremely tasty and really easy to make, too. Use any pesto that you like or make your own if youíre feeling particularly adventurous (Recipe for green pesto at the bottom of the page). This recipe makes 8 mini pizza toppings.


  • 1 jar of pesto
  • 150g pine nuts
  • 2 cooked chicken breasts
  • Salt and pepper
  • 100g parmesan cheese

Method of Preparation:

  1. Place the nuts into a dry frying pan and fry them for around five minutes, keeping an eye on them constantly so that they donít catch and burn. Youíre looking for them to turn golden brown.

  2. Put a tbsp. of pesto onto each pizza base.

  3. Shred the chicken with a fork and divide it between the pizzas.

  4. Divide the pine nuts between the pizzas.

  5. Season each pizza well and then divide the parmesan cheese between each pizza.

  6. Cook them for around 10 minutes in a 200C oven.
