Mini Pizzas - Margareta Topping recipe

Try this delectable cheese and tomato topping that will please everyone at your party. Reserve some of the tomato sauce topping and have it with pasta or chicken. This will top eight mini pizzas, with some sauce left over.

Ingredients:

  • 1 jar of Passata
  • 1 tbsp. tomato puree
  • 1 white onion
  • 4 tbsp. olive oil
  • 15 basil leaves
  • 250g grated cheddar cheese
  • 1 ball of mozzarella
  • Pinch of sugar, salt and pepper

Method of Preparation:

  1. Finely chop the onion. Heat the oil in a frying pan and cook the onion until soft and golden.

  2. Add the tomato puree and stir it around. Cook it out for around five minutes, and then pour in the jar of Passata. Add the basil leaves.

  3. Stir well and then simmer the sauce for 15 minutes.

  4. Pass the sauce through a sieve, discarding anything left behind in the sieve.

  5. Place the sieved sauce back into a saucepan and simmer for another 5-10 minutes, seasoning with the sugar, salt and pepper.

  6. Top the pizzas with the sauce and then divide the cheese between them. Slice the mozzarella and place a couple of slices onto each pizza.

  7. Cook them for around 10 minutes in a 200C oven.
