Marshmallows recipe
Home-made marshmallows are deliciously soft and squidgy. Wrap them in cellophane bags and tie them with ribbon for a lovely party favour.
Ingredients:
- 400g caster sugar
- 150g icing sugar
- 300ml water
- 2 eggs
- 4 tbsp. unflavoured gelatine
- 1 tbsp. golden syrup
- 1 tsp. vanilla extract
Method of Preparation:
Dust a 23cm square baking tin with icing sugar.
Separate the eggs and remove the egg yolks. Whip them using a blender until white and smooth.
Heat 175ml of the water with the caster sugar and golden syrup. Heat that mixture to 120C – check this using a sugar thermometer.
Meanwhile, place the remaining 125ml water into a bowl and sprinkle the gelatine over it. Suspend the bowl over simmering hot water until the gelatine has dissolved. Now, all you have to do is assemble the dish.
Whisk the syrup into the gelatine mixture until smooth. Turn the mixer back on and pour the liquid syrup and gelatine into the beaten egg whites, beating until smooth and glossy and stiff. Mix in the vanilla.
Turn the marshmallow mixture out onto the baking tin and smooth the top out. Let it set for 5 hours minimum, and then cut it into squares. Dust each square with icing sugar.
