Macaroni Cheese recipe

Macaroni cheese is a wonderfully comforting, warming dish. Serve it up with a big spoon and let everyone help themselves.


  • 500g elbow macaroni
  • 200g cheddar cheese
  • 75g parmesan cheese
  • 75g gruyere cheese
  • 50g white bread
  • 800ml milk
  • 50g butter
  • 50g flour
  • 1 tsp. grainy mustard
  • Salt and pepper

Method of Preparation:

  1. Grate all of the cheeses and blitz the bread in a food processor. Mix about 100g of the cheese with the breadcrumbs and set them to one side.

  2. Cook the macaroni according to the packet instructions, and whilst thatís cooking, begin the sauce.

  3. Melt the butter in a large saucepan and then add the flour. Stir quickly to amalgamate the two and cook the flour out for about five minutes. Add the milk in, a little at a time, stirring constantly until you have a thick, glossy sauce. Take it from the heat and then add in the leftover cheese and stir quickly until the cheese is melted. Add the mustard and season the sauce well.

  4. Once the macaroni is cooked, run a hot tap over it to just to separate it out. Mix it into the cheese sauce and then pour the mixture into a large baking dish.

  5. Sprinkle the breadcrumbs over the top of the mixture and cook in the oven at 190C for around 15 minutes.
