Green Pesto recipe

Pesto is a beautifully zesty sauce and can be used in a massive variety of ways – on pasta, as a dipping sauce, on chicken or with fish. You can also use it as a pizza topping. Whip up a batch for your party using the tasty recipe below.


  • Large bunch of fresh basil
  • 3 garlic cloves
  • 50g pine nuts
  • 200ml olive oil
  • 50g grated parmesan cheese

Method of Preparation:

  1. Heat a small frying pan and throw in the pine nuts. Cook them for around five minutes, until golden, constantly keeping an eye on them to make sure that they don’t catch and burn.

  2. Once cooked, place the pine nuts in a blender along with the cheese, basil and garlic cloves.

  3. Turn the processor on and add 150ml of the olive oil in a thin stream until the mixture reaches a loose consistency. You could also use a pestle and mortar.

  4. Put the pesto into a jar and cover with the remaining oil, just to keep it fresh.
