Fairy Cakes recipe

Fairy cakes are brilliant for birthday parties because everybody automatically gets one portion of cake. Make up a batch of thirty cakes or so and ice them with one of our recipes below. This recipe makes enough for 12 cakes.

Ingredients:

  • 115g caster sugar
  • 115g self-raising flour
  • 115g melted butter
  • 2 eggs
  • 1 tsp. vanilla extract

Method of Preparation:

  1. Line a 12-hole muffin tin with muffin cases.

  2. Whisk together the eggs, sugar and vanilla extract.

  3. Add the melted butter and the flour, stirring together until just combined.

  4. Pour the mixture into paper cases and cook in an 180C oven for 10-15 minutes.

  5. Leave to cool and then ice with one of the recipes below.
