Coconut Cake recipe

This coconut cake is delicious when served with a smooth, creamy coconut icing. Read below for the recipe. This recipe makes one cake, and if you want to make a tiered cake, simply double it or triple it as needed.

Ingredients:

  • 200g self-raising flour
  • 75g butter
  • 75g caster sugar
  • 125ml milk
  • 1 tsp. vanilla extract
  • 50g desiccated coconut
  • 1 egg
  • 1 tbsp. lime juice

Method of Preparation:

  1. Grease a 15cm cake tin and preheat the oven to 180C.

  2. Sift the flour into a bowl.

  3. In a separate bowl, beat together the butter and sugar until smooth and pale.

  4. In a jug, beat together the milk, vanilla extract, egg and lime juice.

  5. Pour the milk and egg mixture into the butter and sugar and mix until smooth.

  6. Add the flour and the coconut and stir until smooth.

  7. Tip the mixture into the baking tin and cook for 40 minutes. Allow to cool before icing.
