Cinnamon Almonds recipe

These almonds are really easy to make. Pour them into little jars and give them as gifts or serve them as a nibble as finger food.


1kg whole almonds
2 egg whites
2 tsp. cold water
400g caster sugar
1 tsp. ground cinnamon
Pinch of salt

Method of Preparation:

  1. Preheat the oven to 130C. Grease a large baking tin.

  2. Whisk the egg whites and water until frothy but not stiff.

  3. Stir the nuts into the eggs and stir so that they're all well covered.

  4. Add the sugar, salt and cinnamon and stir again until well combined.

  5. Tip the nuts onto a baking tray and cook for an hour or so, stirring occasionally, until golden brown. Keep an eye on them to prevent them from sticking and burning.

  6. Allow them to cool before eating.
