Caesar Salad recipe

Traditional Caesar salad is absolutely delicious when served alongside many other dishes, making it perfect for a party.


  • 1 medium ciabatta loaf
  • 4 skinless chicken breasts
  • Olive oil
  • 4 baby gem lettuces
  • 2 garlic cloves
  • 4 anchovy fillets, from a tin
  • 200g mayonnaise
  • 2 tbsp. white wine vinegar
  • Salt and pepper
  • Block of parmesan cheese

Method of Preparation:

  1. Heat the oven to 200C. Rip the ciabatta loaf into chunks or cut it into small cubes. Place the cubes into a baking dish and drizzle them with olive oil and seasoning. Cook the croutons for 10 minutes, checking them halfway through and turning them over if needed.

  2. Heat some more olive oil in a frying pan and season the chicken breasts with salt and pepper. Cook them for five minutes on each side or until completely cooked all the way through –the juices will run clear.

  3. Mince the garlic cloves, mash the anchovy fillets and mix them with the mayonnaise and vinegar. Shave the parmesan by using a potato peeler and use as much parmesan as you like.

  4. Take the leaves off of the lettuces and wash them. Shred the chicken and mix the leaves together with the shredded chicken, croutons, parmesan shavings and the dressing.
