Buttercream Icing recipe

This buttercream icing is delicious Ė itís great when served with all sorts of cakes, but goes particularly well with our rainbow cake. If youíre making a layer cake, ice the top of each cake and place the cakes on top of each other and then ice the top and the sides of the cake. If icing cupcakes, use a piping bag to ice a pattern onto each cake.


  • 600g caster sugar
  • 125g butter
  • 2 egg yolks
  • 1 tbsp. milk
  • 1 tbsp. vanilla extract
  • Pinch of salt

Method of Preparation:

  1. Beat the butter until soft and then add in half of the sugar. Beat until smooth.

  2. Add in the egg yolks, one at a time, beating after each addition. Add the milk, the vanilla, salt and the rest of the sugar a little bit at a time until you reach the desired consistency.

  3. Allow to set slightly before icing and make sure that the cakes that youíre icing are completely cold.
